It's now been 2 months.....


I have now been on the Keto diet for two months - and I have lost 30 pounds!!  Holy crap - this diet works.

I had my blood work done after my last weigh-in and it looks like I was really low in vitamin B-12.  I have been taking supplements now and feeling better.  I have also been trying to increase my water intake since my labs said I was mildly dehydrated.   I feel sometimes like I am waterboarding myself - ha!

I plan to stay on this diet through the rest of the summer.  I will keep you updated.

Chicken, Cheese, and Broccoli Bake (Keto Approved)

I tried a new recipe the other day from Julia's Album.  Since I had chicken on hand, and lots of left over cheese from my daughter's 6th birthday party, I went looking for something I could do with it on Pinterest.  This recipe is pretty good and easy to make.  Here's what I did:

Ingredients:
A few pieces of chicken (the recipe online says to get thin chicken breasts -- I used chicken thighs for this)
Salt and Pepper
Cheese (the recipe online says to use two types of cheese -- I just used the taco cheese I had available)
Broccoli
Bacon

First, take out a baking dish and spray it with butter/olive oil spray (If you are on the Keto diet -- you will note that vegetable oil isn't allowed). 
Make your chicken as thin as possible -- if you have the thin chicken breasts, you won't need to do anything here -- I had to pull my thighs apart (HAHA!)). 
Place it in the baking dish and shake on salt and pepper (see pic below).



Next, take two cups of broccoli that has been blanched (boiled for a few minutes) and place it over the chicken. 
Take 6 strips of cooked and crumbled bacon and throw on top of chicken too.
Add 1 or more cups of cheese - the recipe online calls for 1 cup of cheddar and 1/3 cup of mozzarella.
Bake at 400 degrees for 20-30 minutes (depending on how thick your chicken is).



Voila!


My kids ate it -- and so did my husband (although, he pulled the broccoli off it and put it on a sandwich - ha!). 

I would do this recipe again.

Need a chocolate fix? Try these Keto approved No-bake Cookies

You might remember from a few posts ago that I was really craving chocolate and peanut butter.  I tried making some "fat bombs" as they call it and they turned our horribly. So I have been somewhat suspicious of other chocolate treats on Pinterest that are Keto-approved.  Until now.....
 
This recipe comes to us from How to This and That.  Here's what you need:
 
1. Unsweetened natural coconut
2. Butter
3. Peanut butter (check the sugar content -- and if you aren't allowing yourself to do peanut butter on this diet - any other nut butter will do)
4. Liquid vanilla stevia
5. 100% dark cacao powder (optional)
 
Directions:
 
Melt 2 tablespoons of butter in microwave (took about a minute).
Add 3/4 cup of peanut butter and mix well.  Also add 1 tablespoon of the cacao powder if you want them to be chocolate (I did this).
Add 1 cup of the coconut and 4 drops of the stevia.
Mix well
 
 
 
Scoop out onto a cookie sheet and put in your freezer for 5-10 minutes
 
Store them in a freezer bag in your fridge - and pop one whenever the cravings hit you.
